… speaking of which… Hunter Belle Dairy has created a Triple Brie with a black garlic centre. Genius! This creamy, heady, umami burst, when paired with the bright, floral honey with a citrus twist of the Riverland Orange Blossom, creates a completely new, but perfectly balanced flavour.
Umami and citrus flavours are frequently married in many cuisines like Japanese or Mexican. I’ve used this principle here, and strongly recommend you try it out for yourself.
Farming has been in the blood of both families for several generations, you can taste it in the quality of their produce. Nai continues a long-standing family tradition of beekeeping from their home base in the heart of South Australia’s Riverland. The Chesworth family have kept dairy herds on the banks of New South Wales’ Hunter River for six generations and turned their attention to cheese making a couple of decades ago.
