Nai, the founder of AmberHill Honey, was introduced to beekeeping by her father more than 25 years ago. As well as River Red Gum and Orange Blossom, one of the incredible varieties harvested from her South Australian apiaries is Farmhouse Mallee which I’m reviewing today.
I’ve stored mine for some time, so it’s developed a smooth, golden, crystal in the cool Melbourne winters. This has given it a soft, almost chewy consistency; perfect for spreading or pairing with a cheddar or taleggio.
The odour has medium intensity with a savoury, umami base; this is common with most Australian Eucalypt honey varieties. The smell is almost ‘salty’, reminiscent of beef broth or similar to a bouillon cube.
This honey has a strong flavour with heavy caramel and animal base. The savouriness of the odour continues through to the flavour with a buttery smokiness. As well as an accompaniment for cheese, this would be great for baking. The overall taste can best be summed up as ‘salted caramel’.
