Born only a couple of hours’ drive from each other, Wellington Apiary Clover honey and Bruny Island Tom cheese share not only a similar terroir, but both have a light, bright appearance and uncomplex flavours.
They are both so simple and delicious on their own, you could eat them every day. When the flavours are paired, they become something extra special.
The first thing you notice is the silky texture of the Clover honey on the mild, crumbly Tom cheese. The buttery, high fat content of the cheese mirrors the buttery flavour of the honey. In the cheese, you can almost taste the grass that the cows have been grazing. Add the delicate floral, vegetal smell of the honey, and you’re almost transported to the Tasmanian fields yourself.
The flavour of the honey alone is buttery, warm, almost marshmallow in taste with vanilla notes. It’s the perfect, creamy compliment for the earthy, nutty taste of the cheese.
